In my first few years of cooking I started to understand that the best way to get more out of the food I prepare was to create my own vegetable broth.
I found that it’s incredibly easy to make and I like to experiment with it.
In this article, I’ll share with you the basics of making your own vegetable soup and how you can use it to make a tasty homemade broth.
In short, you need: 1-2 cups vegetable broth 1-3 cloves garlic 1-1/2 teaspoons ginger 1-5 cups water 1 cup water 1/2 cup honey (or honey and water for a simple honey-based broth) 1-4 cups water To make your homemade vegetable soup, stir together the water, honey, and garlic in a medium saucepan.
Let simmer for at least 15 minutes or until the water has reduced.
Add the ginger and garlic and continue to cook over medium-low heat for another 10 minutes.
Add a pinch of salt and pepper if needed.
While the water is simmering, add the water to your pot and add the chicken stock and stir to combine.
Add more water as needed.
Stir to combine to make the broth.
Bring to a boil and reduce to a simmer.
Add additional water as necessary and simmer for 10-15 minutes or more until the chicken is cooked through.
Remove from heat and stir in the honey and honey and vinegar.
Serve over rice and top with sliced green onions.
Recipe Notes: If you want a really easy soup that’s just as filling, you can add more vegetables, tofu, and/or other ingredients as desired.
To make this soup gluten-free, you could use gluten-Free GF chicken stock instead of the water.
